The first few pictures were from a cooking class we did in Italy [which I TOTALLY do NOT remember how to make them anymore; even if I have the recipe...] ( .__.)
- Eggplant Parmigiana (Parmigiana di Melanzane)
Ingredients for 4 people:- 5 tablespoon of E.V. olive oil- 1 teaspoon salt- 4 large eggplant, cut into 1 cm. slices- 200 ml/2 cups sun flower oil to deep-fry- 1kg./1/2 lb italian fresh tomato skinned-chopped (Tomatoes on the vine or Roma tomatoes are the best types that you can get back home)- 1 clove garlic- 1 tablespoon fresh organic basil- 250 gr./ 9 Oz. fresh mozzarella cheese, shredded- 100 gr/ 3.5 Oz. grated Parmesan cheese
I normally don't eat aubergine [eggplant] because I really don't like the taste or the texture of it. But this dish was quite different, I actually liked it & would love to try make it again but I very doubt it since I'm sucha crappy cook.
- Homemade Fettuccine with fresh tomatoes, basil and a touch or ricotta cheese (Fettuccine con Pomodoro fresco, basilico e ricotta)
Ingredients (Serving for 4 people):- 4 cups/400gr all purpose flour 00 (remember if you're using all purpose flour 0 you have to sift it first)- 4 eggs- 5 tbsp Extra Virgin Olive oil- 1Kg / 2,2 lb fresh and organic San Marzano or Tomatoes on the vine (the one you can find back home are the Roma tomatoes)- few leaves of fresh organic Basil- 1 clove garlic - 250gr / 1/2lb fresh ricotta cheese (cow milk is preferred to sheep milk)
I gotta admit making pasta is quite fun, I would make it if I had that kinda time.. It took us a very long time & alot of effort, energy aswell to make it. Though it was worth it because homemade pasta...just...so....yummeh!!
- Chocolate Soufflè
Ingredients for 6 soufflè: - 1 cup/100gr/ unsalted butter - 1 cup/100gr. dark chocolate (the best brands to use are Callebaut or Ghirardelli Semi sweet) - 11/4 cup/120gr. confectioner sugar - 1/2 cup/50gr. all purpose flour (I suggest to sift it before using it)- 2 full eggs- 3 egg yolk
This is probably my favorite one out of all the other dishes. I think it was sweet of him writing our names on the plates, it looks more personal and special.

- Tagliolini All'Astice E Tartufo Di Mare In Salsa Di Pachino
This was what my friend had at Babbo's Ristorante in Rome - homemade tagliolini lobster in tomato sauce. The name is probably slightly different because I couldn't find the menu from the restaurant.
- Linguine with Clams, Pancetta and Hot Chiles
This was the BEST pasta I've EVER had in my life.[I'd prefer my pasta to my friend's one LOL] It was so nice that I really wanted another one, but I didn't want to seem sucha big eater...
Just before we were leaving Italy, me & my friend really wanted to go back to this restaurant but it didn't open till later & we had to catch our flight so we were quite depressed.
If any of you visit Rome, I would definitely recommend you to go there. The service was good & of course the food was excellent, the price was affordable too!
